The sky is falling, the sky is falling!!! it was dark, dark, dark last night as i began grabbing my ingredients for the pizza.  I had purchased an extra package of Naan and since my roasted pumpkin creation was sooooo good. i figured maybe second time’s a charm…? here goes nothing.

White Sauce for Pizza:

  • 1 cup heavy cream
  • 1 tbs butter unsalted
  • 3/4 cup parmessan cheese
  • salt & pepper

Flour

In a medium sized sauce pot over medium heat bring to a light boil butter and heavy cream. Whisk in cheese, add pepper & salt to taste. remove from heat and continue whisking until the cheese has married the cream.  if you find that the sauce is not thick enough add a bit of flour (1/4 tsp) mixed with water. The sauce will thicken when it begins to cool. it should drop slowly from the whisk.

Beer Batter:

  • 1 bottle 7oz beer…..i had Presidente at hand, go figure :)
  • 1 cup cake flour
  • 1 egg
  • 2 tbs season salt
  • 1 tbs ground cumin
  • 3 whole tilapia fillets
  • Canola Oil for frying

Preheat oven to 400.

Grab a bowl and add cake flour, egg, and seasonings. Whisk together.  Pop open that beer, add and whisk into a batter.  It will be a sticky batter, think pancake-ish.

Batter up!

Fryer up!!

Cook until goldenly delicious :)   set aside on a paper towel lined plate.

Naan loving time….

grab a baking sheet, place the naans and brush with olive oil.  press the garlic and brush on the naan. Now bake for 15 min.

remove from the oven and now add the white sauce, break the tilapia on top the sauce and bake for another 10-15 minutes.  Until the sauce heats and the flavors blend.  Serve hot….top with chopped scallions and cilantro sprigs. Provide a wedge of lemon.
