All day today i wondered what were we going to eat for dinner? My usual’s ran through my head. Chicken tacos, turkey tacos, fish tacos (?) can you tell we like tacos?? ummmm…. i think we get paid to think about what we are going to do after work :)

Then it came to me, around the 3:30 slump….Pumpkin!! We call it Auyama (a-u-ja-ma) or Calabaza ~ which is way easier to pronounce in english :) ~  but not just the our typical recipe. But roasted pumpkin pizza, and not just any pizza crust, oh no sir! Naan bread would be the foundation to my creation. LOVE, LOVE, LOVE Naan! I relied on some aspects of my mother’s recipe for pumpkin.  Adding my own twist, and may i say it was scrumptious! Guaranteed deliciousness :)

Roasted Pumpkin Pizza Recipe:

  • 2 lb piece of pumpkin or squash
  • 2 naan breads (plain)
  • 1 red onion
  • feta cheese
  • gorgonzola cheese
  • cilantro
  • 1 1/2 garlic clove
  • 1/2 tbs ground sage
  • 1 tbs ground cumin
  • 1 tbs ground paprika
  • 1/2 tbs dried rosemary
  • olive oil
  • sea salt
  • 3 tbs vinegar

Preheat oven 350.

Pumpkin time, remove the seeds and membrane off.  Easiest way is the use a spoon and scrape the pumpkin.

Now remove the skin, use a serrated knife and hold the pumpkin firmly as you remove the skin.

now, slice into 1 inch wedges. Then into cubes.


grab a baking sheet with a rim. coat bottom of sheet with olive oil and add the pumpkin. season with cumin (to taste, i like cumin so i used about 1 tbs), sage about 1/2 tbs, rosemary 1/2 tbs, paprika (to taste, i love paprika so i coat my pumpkin, i used about 1 tbs), and sea salt 1 tbs.

cover with aluminum foil and bake for about 30 mins.

Naan loving time :)

Grab a cookie sheet, place the naan bread on the sheet. brush with olive oil, use a garlic press and press the garlic. spread evenly on the naan. set aside.

Prepare the red onion topping. Slice about 1/2 the onion into rings. in a bowl, add vinegar and 1/2 tbs salt . Toss and set aside.

Pumpkin is calling… check on the pumpkin, it should be tender when poked with a fork.  not all pieces will be completely tender. If the majority are, remove from the oven and top the naan bread with pumpkin.

coat with feta and gorgonzola. I probably added about 3 tbs of each cheese.

Insert back into the oven and bake until cheese melts a bit.

now, cook the onions. In a small pot, add a little olive oil. Once the oil is hot and ready, add the onions. (you may add the juice left in the bowl of the onions)

stir occasionally, cook until wilted. about 5 mins.

It’s assembly time!!

top the pizza with the onions and add a few springs of cilantro.

Eat up!!
