pecans anyone ;) these are kind of like mexican wedding cookies. love light powdered cookies!!! this was part of my christmas batch. again…excuse me as the photo is from the recipe book :(
1/2 cup (1 stick) unsalted butter, at room temperature
2 tablespoons granulated sugar
1/8 teaspoon salt
1 teaspoon vanilla
1 cup pecans
1 cup sifted cake flour
confectioners’ sugar, for dusting
– preheat oven to 300F. Grease 2 cookie sheets. With an electric mixer, cream the butter and sugar until light and fluffy. Stir in the salt and vanilla.
(the recipe calls for the pecans to be grind in a food processor, stirring several times to prevent the nuts from becoming oily) I just used a sharp knife and finely chopped the pecans to small pieces.
sift the cake flour before measuring. Stir the nuts and flour into the butter mixture. Roll the dough into marble-size balls between the palms of your hands. Place on the prepared sheets and bake for 45 minutes. Once they come out of the oven and are still hot roll in confectioners’ sugar. Let cool completely, then roll once more in confectioners’ sugar.
